From the olive tree to the press – on the same day

During harvest the olives are carefully picked at their optimal ripeness and transported directly to the press. There they are processed the very same day, a key factor in producing high-quality premium extra virgin olive oil. Rapid processing minimizes oxidation and preserves the natural aromas, freshness and valuable antioxidants. The result is an oil with exceptionally low acidity – just 0.17%, far below the maximum allowed for extra virgin olive oil (0.8%). This acidity level is an indicator of:
